**About the Role:**

We are seeking experienced Sushi Chefs who specialize in crafting exquisite sushi dishes in a vibrant restaurant setting. As a Traveling Sushi Chef, you will be responsible for preparing a variety of sushi, including hand-pressed rolls of vinegared rice topped with seafood or filled with fish, vegetables, fruits, eggs, or seaweed. Your commitment to using fresh ingredients and adhering to traditional Japanese sushi-making standards will be key to your success.

**What You'll Do:**

- **Create Memorable Experiences:** Lead a team in crafting dishes that showcase our unique cuisine and cultivate a warm, welcoming atmosphere for our guests.
- **Inspire Your Team:** Foster a culture of creativity, collaboration, and innovation within the kitchen.
- **Hands-On Leadership:** Be present and supportive, especially during peak times, to ensure your team thrives.
- **Oversee Operations:** Collaborate with management to optimize kitchen operations, maintain quality control, manage inventory, and adhere to health and safety standards. You will play a vital role in managing labor, budgets, and forecasts to meet financial goals.

**What You Need:**

- **Flexibility:** Your schedule will vary (days, nights, weekends, holidays) based on seasonality and operational needs, with an expectation of working 55 to 60 hours a week.
- **Experience:** A background as an Executive Chef (2+ years) with a focus on elevated Japanese cuisine is preferred.
- **Servant Leadership:** A dedication to serving others, both team members and guests, is essential.
- **Entrepreneurial Spirit:** A hands-on approach, working side by side with your team during prep and service.
- **Accountability:** Experience managing restaurant financials, particularly food costs and labor.
